catching up a bit...

So you may have noticed that I have taken a little break from the blog...trying to decide whether to bring it back to life or not. Any thoughts?

Here are a few milestones that have happened recently (and all in the same week....)

...and the fact that I turned in all my papers for this quarter! Hooray for 2 weeks of freedom which will include a short trip to NC and VA next week!!

an update on life, hearing, school, and valley girls

This has been a big week for Suzy. More on that in a second. I'm reminded more and more each day with her mind-blowing questions and her witty humor that she is no longer a little girl.


If you ever need to study for a DMV test, she's the one to ride with. She will ask you about every single sign on the road, why you turned at that red light, why you are going so fast. Sometimes I get a little impatient trying to answer all the questions while trying to drive, but then i try to think ahead about 12 years or so when the seats are reversed. She's the one driving, I'm the one asking all the questions. I'm hoping her desire to converse with me then is the same!

This past week Suzy got tubes in her ears after a year long battle with fluid constantly in her ears, especially anytime she had a cold (which is always, thanks to preschool). This means I've had to answer all the questions at least 3 times each since she hasn't been able to hear me, so when the doctor recommended ear tubes, I was so ready. Suzy did great and was back to normal by the afternoon of the surgery. (I, on the other hand, was a zombie because Emory thought it would be awesome to be awake from 3am-5am when we had to wake up at 5am anyway).

Suzy's hearing is definitely improved, although they are still going to do some followup hearing tests to make sure everything is OK.


Elvis and i are working on our own hearing skills lately.
We have to leave our apartment this summer which has been SUCH a blessing with its reduced rent, fully furnished apartment, with Trader Joe's and Panera donations. Not to mention the amazing community we have had from day one. We knew we wanted to stay in LA,  but that's a pretty large area and needed the Lord's guidance about what is next for us. Although we still are dreaming and praying about what ministry and work will look like for us down the road, we feel like the first step is to move to a part of the city called San Fernando Valley which is home to many latino immigrants including several from our small group which were friends of ours from back in El Salvador. It makes sense for us to settle down in a place where we already have a community started. Also it's close to Elvis's job.

Remember back in the day when we would joke about valley girls? Like, totally, like, gag me with a spoon?
Yep, they are referring to San Fernando Valley! Guess this means Suzy will officially be a valley girl....

Speaking of Suzy, one of the main pieces of the puzzle for our future that wasn't settled was where Suzy would go to school. We have always wanted her to go to a bilingual school but competition is brutal out here for schools. And preschool prices are brutal. Turns out that she is eligible for a new program in the public school system called Transitional Kindergarten since she will be turning 5 in November- it's a 2 year kindergarten program for kids with birthdays like hers.

We just found out this week that she got into the one school that we really wanted her to go to! They had a lottery since there were 150 applicants and only 40 spots. It's a multicultural, bilingual, arts-based and social justice focused public charter school. They start off in kindergarten with 90% spanish and by 5th grade english and spanish are 50/50. So, it's official...we have a rising kindergartner on our hands. How did this happen?? She is graduating from the 3 year old preschool class in just a few months! Although it is a shock, we couldn't be more thrilled. This means Emory has an automatic spot in that school as well, when the time comes. So thankful that God worked out the details with schooling as we try to focus on following Him wherever He leads.

May He continue to help us all hear more clearly.

8 years!

Celebrating today the vows we made to each other 8 years ago!! They are no longer simply the pretty words of two lovestruck 22-year olds but time-tested commitments, promises, roots of a love that is growing each day and blossoming into something much more beautiful than we could have ever imagined.

aaaand another kale salad. are you tired of them yet?

Got this delish and super easy kale salad recipe from my friend Lucy, and she got it from http://www.nourishingmeals.com/2013/12/christmas-kale-salad.html

I left out the onions for my little man's sake and used OJ from the carton instead of fresh b/c thats all i had (i feel so guilty for writing that since we live in southern california....) You might want to add just a squirt of honey to the dressing as well. enjoy!

This is straight from their webpage:


Christmas Kale Salad
Salad:
1 large bunch green curly kale, chopped
1/2 small red onion, thinly sliced
1/2 cup dried cranberries (fruit-juice sweetened)
1/2 cup pecans, roasted*

Dressing:
1/4 cup freshly squeezed orange juice
1/4 cup extra virgin olive oil
2 tablespoons raw apple cider vinegar
1 teaspoon organic Dijon mustard
1 to 2 teaspoons finely grated orange zest
1/4 to 1/2 teaspoon ground cinnamon
1/2 teaspoon Herbamare or sea salt

Place the kale into a large serving bowl. Add the onions and cranberries; set aside. To make the dressing, place all of the ingredients into a small jar, cover, and shake. Pour dressing over the salad and toss together. Let it rest for at least 30 minutes before serving (this softens the kale and melds the flavors). Then add the roasted pecans and serve (if you add the pecans earlier they will soften and not have that delicate crunch).

*Note: To roast pecans, preheat the oven to 350 degrees F. Place pecans into a glass pie plate or other small baking dish. Roast for 15 to 18 minutes. Watch carefully so they don't burn! Remove from oven and place onto a plate to cool before adding them to the salad.

Yield: about 6 servings

another kale salad recipe

Today I want to share a new recipe with all (3?) of you that read this blog in honor of Emory who started eating food this week. Turns out our baby LOVES eating as much as he loves nursing and even from the first time he tried oatmeal, he was grabbing the spoon and almost dunking his head in the bowl trying to get more. Today he tried avocado and gave it two thumbs up. It's such a new experience to have a baby who likes to eat!

You may remember a few months back when I was flipping out over kale and posted this recipe. Well, guess what...I'm still flipping out over kale. And I've got a new recipe thanks to my friend Melinda who brought this salad over the other night. I totally monopolized the salad and didn't really share with anyone else. It is SUPER easy to make and has a very subtle yet highly addictive flavor. YUM. I just ate an obscene amount of this salad tonight (and it was just the side dish to carne asada tacos and garlicky butter yucca!) and want more salad for dessert.

Remember that I don't really work with measurements and I scarfed the whole bowl down before I could take a picture, so you'll have to use your creativity.

All you need is:
olive oil
kale
salt and pepper
pear
shredded parmesan cheese
roasted almonds

First, pour on the kale enough olive oil to coat it well and start massaging the heck out it the leaves until they are tender and are coated with a thin layer of olive oil. Then, squirt a few drops of lemon or lime juice (don't overdo the lemon) and a generous shaking of salt and pepper. Next, add chunks of pear, shredded parmesan cheese, and roasted almonds and toss everything together. DONE! Told you it was super easy.

I just buy raw almonds either at TJ's or in bulk at a cheap international grocery store and then pop them in the toaster oven on 350 for a few minutes til the house starts smelling awesome.

Christmas recap

We had a great week and a half with Nana and Grandaddy here, celebrating Christmas and the New Year (other than that nasty stomach virus wiping us all out for a few days!). Suzy really got into giving this year and we found cute little packages she had wrapped up under the tree all by herself of pictures she had made and pencils she wanted to give. She was thrilled to receive roller skates and a Lite Brite for Christmas from Nana and Grandaddy (yea old school!) and Emory was thrilled to receive anything he could put in his mouth.
